January Cookie: Snowball Meltaways!
This was the first Cookie that I ever tried baking. I was about 10 years old. I made them for a Country report that I did on Russia in 6th grade. I fell in love then. Um, yes of course I meant the cookies, although, I did have a major crush on a boy at that time too! :)

It's simple ingredients made it very easy for me to tackle. I had no idea that a dream was born with these light & tender cookies melting in my mouth! They really do melt in your mouth.

So, what do you need to do to eat these today?
Preheat your oven to 400 Degrees
Mix together with an electric mixer:
1 cup butter (softened)
1/2 c confectioner's sugar
1 tsp vanilla extract

Then add:
2 1/4 c all purpose flour
3/4 c finely chopped nuts (I use pecans)
1/2 tsp salt
Stir until it holds it's shape when you pinch a little bit between your fingers.
Roll into 1 to 2 inch balls.

  I used a cookie scoop to portion them out. (I like uniform shapes & sizes.)
Bake on parchment lined baking sheet for 8-10 minutes. You want them set, but NOT brown.

Now, let them cool... but just a minute or so! While still warm,
Pour some more confectioner's sugar into a small bowl. You will probably need about another 1/2 c.

Roll these light colored cookies around in this bowl until coated a little. The cookie may feel sticky & melty, but that's okay. Keep reading.

Let them sit until completely cool.

Then roll them in the confectioner's sugar...again!
Store loosely covered for about 2-3 days.

These have been called a lot of different names from Russian teacakes, to Mexican Wedding cookies, but whatever you want to call them, I say it should be...gooood! They're still one of my favorites. I feel they're the perfect cookie to start off our Sweet New Year!
