White Chocolate Krispy Treats!

With Independence Day right around the corner were excited for backyard BBQ's, & all the fun Red, White, & Blue treats! Although I will not be taking orders this week, I'll post some pictures here & there of yummy desserts you can make at home! Here's to a super quick Monday recipe!

Try stirring a little melted white chocolate into your melted marshmallows before adding the cereal. Reserve some white chocolate for drizzling the tops of your krispy treats. Add a bit of fun color with sprinkles! There you have it...Yummy white chocolate Rice Krispy Treats!

Fondant Cookie Cut-outs!

Tip of the day!
For a clean look on sugar cookies, try fondant! Fondant is easy to work with, & our recipe tastes delicious!  (Recipe below) Using the same cutter that you used to cut-out your sugar cookie shapes, roll out your fondant the exact same way & cut-out with the same cutter.
Use a bit of frosting or corn syrup to adhere it to the top of your baked cookies! Memorial Day cookies would be really fun using a star cutter & placing red, white, & blue fondant stars on top!
The Sweet Cherub’s Easy Fondant:
Don’t be afraid! It’s like playing with play dough, & no one will make fun of you if you eat it!!! 
In a large bowl in your microwave, melt together:
1- 16 oz bag of mini marshmallows & 4 Tbsp water.  (About 1-2 min then remove from microwave & stir until gooey & sticky like marshmallow cream.)
Once completely melted, stir in:
1 tsp flavoring (like vanilla extract) & food coloring of your choice, if desired.
Then sift into the marshmallow mixture:
1- 16 oz bag of powdered sugar.  With a greased spatula stir to combine the best you can.
Grease your hands, wrists, & fingers really well with Crisco. Grease your counter really well also.  It’s going to be very sticky!!!
Dump the fondant mixture onto the greased counter, & knead like you would with bread.  Knead until you form a smooth ball.  (About 8 minutes.)   *Use now, or store for up to 1 week. 

When ready to use, roll out to ¼ inch thickness onto a greased surface.  Cut with cookie cutters, or for a cake trim with a pizza wheel.  Makes enough to cover a 3 layer cake with some to spare! 
A clean piece of PVC pipe works great as a rolling pin! 
*To store: Cover fondant ball with a light coating of Crisco, & wrap in plastic wrap.  Then place inside an airtight container. 
This fondant tastes amazing!  Not like the icky store-bought stuff!

Looking for a quick & delicious breakfast for Cinco de Mayo? Try this! It's super easy... & when drizzled with honey it tastes a lot like a sopapilla!
Serve with fresh fruit, a cup of Mexican hot chocolate, or a tall glass of O.J. & you're set! .


Sopapilla Cake:

Spray a 9x13” baking dish with non-stick spray. 

Unroll 1 package of crescent roll dough & press into bottom of pan.

Cream together:

2 8oz Pkgs of cream cheese

1 cup sugar

1 tsp vanilla

Spread over the top of crescent roll layer.

Unroll 1 more package of crescent roll dough & place on top of cream cheese layer.

Melt 1 stick of butter & pour over the entire cake.

Sprinkle top with ¼ c cinnamon sugar

Bake at 350 degrees for 30-40 minutes. Remove from oven & cool completely.

Drizzle with honey if desired. 

May add a layer of apple pie filling for an added treat!

Scone Sunday!

Beignets
What do you like to do on a relaxing weekend?  Here's one of my favorites.  Make doughnuts, fry scones, bake... okay, I like to make just about anything, any day!  But, I'm especially fond of these...Beignets. (pronounced Ben-yay's)  They're so light & puffy!  Plus they're super easy to make! 

We cut a big bouquet of fresh lilacs from the garden, set a pretty table with a variety of yummy toppings, like fresh fruit, & then my entire family enjoyed a lazy brunch with Beignets as the star! 
I hope you enjoy them as much as we did!

Beignets
Recipe by Our Best Bites

1 c. whole milk
1/4 c. + 1 Tbsp. sugar, divided
1/4 c. vegetable oil
1 tsp. table salt
3 1/2-4 c. all-purpose flour
1 scant tablespoon dry active yeast
1/2 c. warm (about 105 degrees) water
1 egg
Peanut oil for frying


In a small saucepan, combine the milk, 1/4 c. sugar, vegetable oil, and salt. Heat over medium heat until small bubbles form around the edges of the pan.  Remove from heat.

While the milk is heating, combine the yeast and 1 Tbsp. of sugar with 1/2 c. water. Allow to stand for 10 minutes or until it’s very bubbly.

In the bowl of a stand mixer, combine the heated milk and 2 c. flour. Mix, scraping the bowl occasionally, until smooth (about 2-3 minutes). Add the egg and mix until well-combined. Add the yeast mixture. Add enough flour to make a soft dough that slightly sticks to your finger.

At this point, you can either place the dough in a bowl sprayed with non-stick cooking spray and cover with a piece of sprayed plastic wrap and refrigerate the dough up to 1 day or you can roll the dough out on a lightly floured surface. Either way, when you roll it out, roll it into a large rectangle about 1/4″ thick. Using a pizza wheel, cut the dough into about 3″x4″ rectangles. Slightly separate the dough pieces and cover with a clean cloth. Allow to rise for 30 minutes.

When the dough has about 15 minutes left to go, heat 2-3 inches of peanut oil in a large skillet or saucepan to 325 degrees (just use a candy thermometer). When the oil is heated, fry the dough pieces for about 90 seconds-2 minutes per side or until they are golden. Carefully remove from the oil and allow to drain on a paper towel-lined baking sheet.

Place some powdered sugar in a fine-mesh strainer and sprinkle the powdered sugar generously over the beignets. Serve immediately. Makes about 24-30 beignets.

Utah Scones with Buttermilk Syrup

We love scone Sunday!  Once a month we get together with the In-law's, (yes it really is fun!)  The times that I enjoy the most are when my Mother-in-law mixes up a batch of her famous yeast scone dough, fry's that sticky goodness up, & then we top them with endless choices of
honey, jams, or my personal favorite creamy peanut butter! 
The other day I made scones with just my cute family, & mixed up a batch of my addicting buttermilk syrup... It may be a contender for my new favorite topping! 
Drizzle this amazing syrup over your hot scones... and I promise you'll be thanking me later!

Amme’s Buttermilk Syrup
1 1/2 c sugar
3/4 c buttermilk
1/2 c butter
2 Tbsp corn syrup
1 tsp baking soda
pinch of salt
2 tsp vanilla extract
In a large saucepan, combine the first six  syrup ingredients; bring to a boil. Boil for 7 minutes. Remove from the heat; stir in vanilla. Great served on pancakes, french toast, or scones.

Glazed Doughnuts

Are you looking forward to the weekend? We are! Usually for us it means making doughnuts! With our yummy recipe you'll never go to your favorite doughnut shop again! It's super fun to get the entire family involved & turn it into a doughnut bar! Take a peek below for easy topping ideas!

Glazed Doughnuts:
2 (.25 ounce) envelopes active dry yeast
1/4 c warm water
1 1/2 c lukewarm milk
1/2 cup sugar
1 tsp salt
2 eggs
1/3 c shortening
5 c all-purpose flour
1 quart oil for frying

Glaze:
1/3 c butter
2 c powdered sugar
1 1/2 tsp vanilla
4 Tbsp hot water or as needed
Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 c of the flour. Mix for a few minutes at low speed, beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double.
Dough is ready if you touch it, and the indention remains.
Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double.
(Cover loosely with a cloth.)
Melt butter, stir in powdered sugar and vanilla until smooth. Stir in hot water one Tbsp at a time until the icing is somewhat thin, but not watery. Set aside.
In a deep-fryer or large heavy skillet heat the oil to 350 degrees. Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface.
(I use two chopsticks as flippers) 
Fry doughnuts on each side until golden brown. Remove from oil & drain. Dip doughnuts into the glaze while still hot!  Makes about 20 yummy doughnuts.
 Stack them on a chopstick or skewer & serve them to hungry guests!
My favorite is glazed, then dipped in chocolate icing & filled with vanilla Pudding!  Yes Please!
Try adding yummy toppings! Some fun ideas are: Shredded Coconut, Warm & melty, chocolate frosting (store bought is fine!) add sprinkles, fresh fruit, nuts,
jams, or go crazy & make it into an ice cream sundae!
My favorite happens to be chocolate & filled with instant vanilla pudding?
Or go ahead & serve up a classic!  Roll warm doughnuts or in cinnamon & sugar! 
Don't forget the holes!

Fruit Pizza for our Spring Party

Use mini Cadbury eggs to create cute cupcakes!
 Cadbury Creme Egg Cupcakes! Love them or hate them? If you ♥ them then this is for you! Use your favorite chocolate cake recipe. Then, using a large round tip frost with buttercream icing & top with a mini Cadbury Creme Egg! We filled the center of our cupcakes with a sweet creme for an extra surprise! 
Chocolate Cookies using Cadbury eggs! 
 
Chocolate Cadbury Cookies:
2-1/4 c flour
1 tsp baking soda
1/2 tsp salt
1 c butter, softened
3/4 c packed brown sugar
1/4 c white sugar
1 (3.4 ounce) package instant chocolate pudding mix
2 eggs
1 tsp vanilla extract
1 10 oz Bag of Cadbury Eggs; chopped
Preheat oven to 350 degrees.  Sift together the flour and baking soda, & salt, set aside.
Cream together the butter, brown sugar, and white sugar.
Beat in the dry instant pudding mix until blended. Stir in the eggs and vanilla.
Blend in the flour mixture. Finally, stir in the chopped Cadbury Eggs.  
Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes.
*To prevent cookies from spreading, refrigerate dough overnight before baking.

Peeps Rice Krispy Treats
 Rice Krispy treats that use 35 marshmallow PEEPS in place of the regular marshmallows! It's quick & fun to mix the colors! Give it a try!So fun to mix colors!  Yum!
Bunny Bait
Pop in your favorite Easter movie & sit back & relax while enjoying this festive Bunny Bait!
In a Large bowl mix:
12 c popped popcorn, 2 c pretzels, 2 c peanuts, 1 bag pastel Easter M&M's,
& 1 bag Easter Candy Corn.
Eat as is -OR- make it "egg"tra fabulous by topping with 1 lb of melted white colored candy melts! (I think this would be so cute served to your guests inside a giant Easter Basket!) Serves 30

Jelly bean fudge
 
Easily prepared in the microwave so that anyone can make it! 
We used tropical (tangy) jellybeans for the perfect flavor balance.

Easy Jelly Bean Fudge
On low power in microwave melt together:
3 c white chocolate chips
¼ c butter
1 14oz can sweetened condensed milk
1 tsp orange extract
Stir once or twice during melting to make sure it doesn’t burn!
Once completely melted; remove from microwave, mix in
1 c Jelly beans stirring well. 
Pour into a prepared 8x8 pan. Sprinkle 1 c jelly beans on top.
Refrigerate until set.
Cut into squares & store in an air-tight container for up to 2 weeks.


Raisin Filled Cookies
 We love doing custom orders! These Raisin filled cookies were ordered to have reduced sugar, & be hand painted before baking so they look like little colorful Easter eggs! Fun & Yummy!
Hot Cross Buns
It was a beautiful beginning to the Easter weekend?  These are the perfect way to enjoy your Good Friday! "Hot cross buns, Hot cross buns, one a penny, two a penny, Hot cross buns."

Egg Shaped Cake Pops!
 Easter Baking is in full swing! So, here's one last DIY treat for the Bunny to bring in your Easter basket! Cake Pops! Bake any flavor cake mix according to package directions. Let cool completely. Put entire baked cake into a food processor & pulse until it's crumbs. Dump cake crumbs into a large bowl & stir in one container of store bought frosting until combined. Easy Right? Form into ball or egg shape. Place cake ball onto a baking sheet lined with wax paper & chill in freezer 15 min. When ready add a stick & quickly dip in colored candy melts. Let dry, then eat!

 Egg shaped Krispy Treats! Whip up a batch of Rice Krispy Cereal Treats, cut them out using fun shaped cutters, add a stick, & dip into melted white chocolate! So cute for your Holiday table!

 Hippity Hoppity Easter's on its way! My kids loved making these! Using scissors- cut your marshmallow & dip in colored sugar for the ears! Pink jelly bean nose, Starburst bow tie, Mini M&M's eyes, & chocolate jimmie whiskers complete this adorable Bunny Cupcake!
