Ooey Gooey Cake

It's Spring here in Utah, so who wants to be indoors baking all day?  Well we're here to help you out!  This easy dessert is quick to throw together so that you can "have your cake & eat it too"... & still have time to enjoy the sunshine! 
This Southern original is sure to please everyone!

Just as the name implies, this is a rich & gooey bar like cake.
I love the flaky top & moist center!
Slice it up & serve warm or cold for your next brunch or Holiday potluck.


Gooey Butter Cake
1 Box French Vanilla cake mix
1 egg
1 stick of butter, melted

Filling
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
1 stick of butter, melted
1 16-ounce (1lb) powdered sugar

 Directions
Preheat oven to 350 degrees.

Combine the cake mix, egg, and butter and mix well.

Pat the mixture into the bottom of a lightly greased 9x13” baking pan.

In a large bowl, beat the cream cheese until fluffy & smooth.

Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar and mix well. (You may wish to reserve a couple of

Tablespoons of powdered sugar for dusting on top of your finished cake.)

Spread filling over cake batter and bake for 30 to 40 minutes.

Do NOT over bake! The center should be a little gooey.

Let cool, & sprinkle reserved powdered sugar on top.  Serve warm or cold.

Rainbow Bark

I have always loved the colors of the rainbow.  After rainfall, if my darling kids see one, they'll come running inside screaming for me to come out & look into the sky!  Why? Because THEY also know I LOVE rainbows!  I love everything that even appears to come in rainbows,  M&M's, Christmas lights, Crayons, etc.  Don't believe me?  My room as a child was decorated with a rainbow canopy, bedspread....well, okay, you get the picture. 

Not only do I think they're beautiful, magical, amazing... well, okay, you still get the picture.  I also think that they symbolize so much in life.  "After every storm there's always a rainbow."  It symbolizes hope, it's sortof like a wonderful reward for enduring the hard part.  So, a rainbow was the first thing that popped into my head for 9 year old Kaleb Heaps whom is fighting Cancer. I couldn't think of anything more perfect than to create & donate this rainbow bark to his bake sale on St. Patrick's Day.

3.14 Pi day!

I don't claim to be much of a math expert, but somehow, someway if you put "baking" behind all those confusing fractions & strange equations like 3.14 = pi....well now it makes sense, & being smart never tasted so good!

So in honor of yet another reason to enjoy pie (March 14th) Here's a few pictures of pies that I don't need an excuse to love.

The Sweet Cherub hardly ever needs an excuse to celebrate with a delish dessert. So as you can imagine she get's very excited as official holiday's roll around. But, every once-in-a-while they're mixed-in with some quirky holiday's too.
We try our best to get creative & bake or make something special to fit right in. As a matter of fact just in the last couple of weeks we've had Mardi Gras, National Peanut Butter Day, National Favorite Cereal Day, & National Margarita Day!... ( that's just to mention a few.)

The Cupcake business ShamROCKs!

I love cupcakes!  Mainly because of their perfect serving size, & their easy to carry packaging. But, I think my biggest reason for loving them is due to their endless choice of flavors!  The sky's the limit as far as creativity goes for these little cakes! 

I have literally made thousands of cupcakes & yet, I still have so many new flavor profiles, colors, & delicious variations swirling around in my head. 
I think about creamy frosting, on top of light & fluffy cupcakes every single day! 

So, what's my next yummy cupcake creation to be made? Just you wait & see...& perhaps you may even get the chance to taste one or two!

Happy B-Day Dr. Suess!

The Cat in the Hat is a classic!  I can't even count how many different Dr. Suess books that I've read to my children...or how many times I've read the same one over, & over, &... but what I can tell you is that out of all the Dr. Suess books I've memorized... 
I've always loved Thing 1 and Thing 2!  They're my favorite!

And what do you know?  These crazy characters actually came to life...6 years ago, I ended up having twin boys that remind me a lot of these 2 wild "things"  It's been exciting to say the least!  But what's really fun is that today Thing 1 and Thing 2 both helped me make these fun cupcakes! 

Today, my cute kids will celebrate by reading books, playing our silly"Cat in the Hat" board game,
 & finishing off our magical day with these yummy cotton candy cupcakes! 
Dr. Suess was a genius!
And, just in case you're wondering?... "Yes, I will eat these in a boat, I will eat these with a goat"....

March Cookie: Grasshopper!

March Cookie:  Grasshopper!
There are a few flavor combinations of which we consider a match made in Heaven!  And here's one of them...Chocolate & Mint!  Which now brings us to our cookie of the month.  Grasshopper.  Of course they're no Girl Scout "Thin Mints" but, pretty darn yummy if I dare say so myself! 

These cookies have a slightly crispy edge, but at the same time they're still chewy in the center.  We top each freshly baked cookie with an Andes Mint.  The Andes Mints will melt into a perfect swirl of minty icing goodness!  So, are you ready to Give 'em a try?

The Sweet Cherub's Grasshopper Cookie Recipe:


Pre-heat oven to 350 degrees
Melt together in microwave:
1 c butter
6 (1 ounce squares) unsweetened chocolate
set chocolate mixture aside to cool.

In a mixing bowl cream together:
1 c sugar
1 c firmly-packed brown sugar
2 eggs
1/2 c buttermilk
1 tsp vanilla
Now stir in the melted butter & chocolate mixture, combine well.

Add to the wet ingredients:
2 3/4 c all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c Andes Mints baking bits *see below

Bake on prepared baking sheet for 12 to 15 minutes.

For the mint "glaze":
2 boxes unwrapped Andes Mint after dinner mints
Buttermilk is the secret ingredient in this cookie!


You will find these bags of Andes Mints bits in the baking section of your local grocery store,
most likely where you always find your chocolate chips.

This may be a little confusing, but we'll ALSO be using 2 boxes of Andes Mints that you may find in the candy isle.  You will want these because they melt so nicely on top of the warm cookies. 
*Andes Mint "after-dinner" mint style.



When finished mixing your batter may seem very thin.  Don't panic!
Allow the dough to rest for 15 minutes. 
It will slightly thicken which will allow for easier scooping.

After the dough has thickened using a cookie scoop, drop about one Tbsp of dough 3 inches apart
onto a greased baking sheet.
I always use parchment paper for easy clean-up!  Nothing sticks to this stuff!
BAKE at 350 degrees for 12 minutes.  15 if you like your cookies crisp.



Unwrap mints & immediately place one on each cookie While still hot from the oven... Let them sit for about a minute.  See how each little mint is becoming that puddle of melted goodness I told you about?  Using a knife or the back of a spoon gently swirl chocolate to cover cookie! 

There you have it the easiest minty frosting you'll ever find!
Let the cookies cool & set completely before storing.


Refreshing, crunchy, chocolate-y, what could be better?
