April Cookie: Lemon Crinkle |

| Here's what you need: 1 box lemon cake mix 1 3 oz package of lemon instant pudding mix 2 eggs 1 8oz container of cool whip thawed juice from one fresh lemon powdered sugar for rolling |

| In a stand mixer, combine dry cake mix, dry pudding packet, 2 eggs, & fresh lemon juice (I also added the zest from the same lemon) |

| It will look like this! |

| Then mix in the container of Cool Whip! |

| Then it will look like this! A pretty pale yellow, & it will smell so lemony! |

| Pour about 1 1/2 cups of powdered sugar into a bowl. With a scoop drop the lemon cookie batter one by one into the powdered sugar & roll around until covered. Don't attempt touching the dough with your bare hands! It's very, very, sticky! |
