April Cookie: Lemon Crinkle

A fresh lemon flavor, easy prep, & a recipe that everyone will want to steal!  Sounds good right?Here's our Cookie of the Month for April!  It tastes just like Spring!


April Cookie: Lemon Crinkle


Here's what you need:
1 box lemon cake mix
1 3 oz package of lemon instant pudding mix
2 eggs
1 8oz container of cool whip thawed
juice from one fresh lemon
powdered sugar for rolling


In a stand mixer, combine dry cake mix, dry pudding packet, 2 eggs,
& fresh lemon juice (I also added the zest from the same lemon)

It will look like this!

Then mix in the container of Cool Whip!



Then it will look like this! 
A pretty pale yellow, & it will smell so lemony!


Pour about 1 1/2 cups of powdered sugar into a bowl.  With a scoop drop the lemon cookie batter
one by one into the powdered sugar & roll around until covered.
Don't attempt touching the dough with your bare hands!  It's very, very, sticky!

Then it will look like this! 
Bake on parchment lined baking sheet for 10 minutes at 350 degrees!

Chewy, moist, tart, & sooo delicious!
