February Cookie: Shortbread!

Simple. Simple. Simple. yet sooo delicious!  As far as I'm concerned that's a winning combination! These cookies come together quickly, & disappear even faster!  Eat them plain, dipped in chocolate, or top them with cute sprinkles to add a festive touch for any Holiday!  * See our easy recipe below!

Cream together 4 sticks softened butter with 1 c powdered sugar until light & fluffy.
Add 2 tsp Vanilla extract. 
Sift together 4 cups flour with 1/2tsp salt.
Add to mixer & mix on low just until combined.
At this point it will appear to be a bit crumbly. That's okay.

Wrap the dough in plastic wrap & refrigerate until ready to use.  It will be ready to roll in about 30 minutes!
Lightly flour your work surface & roll dough to 1/4 inch thickness.
Cut with any 2 inch cutter you desire.
Place 2 inches apart on a parchment lined baking sheet & sprinkle with sanding sugar.  It gives the cookie a pretty sparkle, & tasty crunch.  Bake at 350 degrees for about 15 minutes. 
Then let cool completely. Meanwhile....

In microwave on half power melt 3 ounces high quality semi-sweet chocolate chips. Stir often so they don't burn!  Once you've done that add to your melted chocolate another 3 ounces semi-sweet chocolate chips. Stir them together until completely melted.  This helps stabilize your chocolate for dipping. 

*I also added 1 tsp vegetable oil to my melted chocolate.  It thins out my chocolate for the dipping consistency that I prefer. But not necessary:)
Dip the edge of each shortbread or drizzle chocolate across each cookie.
If you're not a chocolate fan, these are also delicious iced with a lemon/powdered sugar glaze!
